Where is it from?
Our menu travels across Brazil. Guess which biome each ingredient comes from.
- JambuThe leaf that makes your mouth tingle. Star of tacacá and duck in tucupi, in Pará.
- CupuaçuA cousin of cacao, with tart and very fragrant pulp.
- CumaruThe “Brazilian vanilla”: a sweet-scented seed used in desserts and cocktails.
- PequiA yellow fruit with a striking aroma, symbol of Goiás cooking. Watch out for the spines in the pit.
- BaruA nut from the Cerrado. Toasted, it tastes like a mix of peanut and cashew.
- UmbuA tart fruit from the sertão, the base of the famous umbuzada.
- CambuciA flying-saucer-shaped fruit, very tart, typical of São Paulo’s Serra do Mar.
- JuçaraAn endangered palm. Its fruit gives a pulp similar to açaí.
- ButiáA small yellow palm fruit from southern Brazil, used in liqueurs and infused cachaça.
